In the run up to Christmas, we have some key safety messages to try and keep everyone happy and healthy over the winter months.

Today’s focus is on road and food safety.

Whether cooking at home, or reusing leftovers, it’s important to maintain good food hygiene at Christmas by following the ‘4Cs’  of cleaning, chilling, cooking and avoiding cross contamination.

Thinking hygienically when storing, cooking, reusing and freezing food will help keep your Christmas safe and minimise food waste over the festive period.

Here’s some more tips on how to stay food safe:

  • Keep raw and ready-to-eat food separate and make sure raw foods are stored in the bottom of your fridge.
  • Know the difference between best before and use-by dates.
  • Check your fridge is set at 5°C or below. Test this with a fridge thermometer.
  • If your turkey is frozen, check the guidance on the packaging in advance. Some turkeys can be cooked from frozen if the manufacturer’s instructions say so. However, most frozen turkeys will need to be defrosted. Plan this in advance, as a whole turkey can take between three to five days to properly defrost. You should defrost your turkey in the fridge and allow around 10-12 hours per kg.
  • Cook your stuffing in a separate roasting tin, not inside the turkey. A stuffed turkey will take longer to cook and may not cook thoroughly if it has not reached the correct temperature throughout.

Of all the seasons, winter requires the most care and preparation if you're to stay safe on the roads.

In snow or icy conditions, it will take longer to stop - always drive at a speed appropriate for the conditions.

At this time of year it's even more important to check your vehicle is well maintained and serviced.

Driving tips:

  • Slow down.
  • Keep a greater distance between yourself and the vehicle in front.
  • Set aside extra time to complete your journey.
  • Keep your mobile fully charged.
  • Use the highest gear possible to avoid wheel spin in snow.
  • Manoeuvre gently, avoiding harsh braking and acceleration.
